Root to Table: A Regenerative Market-to-Meal Experience

Join us for a vibrant and immersive culinary journey that begins at the farmers market and ends at the table. In this one-of-a-kind farm-to-table experience, you’ll explore the principles of regenerative agriculture while discovering the joy of cooking with fresh, seasonal ingredients sourced directly from local growers.

We’ll begin the day with a guided tour of a local farmers market, where you’ll meet producers, learn how to shop seasonally and sustainably, and select ingredients for our meal together. Then, we’ll head to the kitchen to prepare a delicious, community-style feast that reflects the best of what the land—and the season—has to offer.

Throughout the experience, you’ll learn how regenerative farming practices like composting, cover cropping, rotational grazing, and biodiversity contribute to healthier ecosystems and more resilient communities. You’ll also leave with tools to help you source local food and build nourishing habits at home.

As you depart, you’ll take home a thoughtfully curated set of resources and gifts to continue your journey—from a seasonal meal planning and sourcing guide, to a packet of regenerative seeds, and a jar of infused salt or house-made spice blend. You’ll also receive a downloadable pantry planner to help you build sustainable habits long after the last bite.

Menu:

A farm-to-table luncheon created from that morning’s farmers’ market haul. This menu is intentionally flexible – it will showcase whatever is freshest and in season – but here’s an example of the vibrant, rustic dishes the class might prepare. The focus is on seasonal vegetables, whole grains, and sustainable proteins, using “just-picked peak” ingredients that only need simple preparation to shine. Each part of the plant is utilized (root-to-leaf cooking) to honor regenerative principles and minimize waste.

(Throughout this class, participants learn about regenerative farming practices and how to source ingredients locally. The menu’s flexibility teaches how to “cook with the seasons” – picking the best produce available and cooking it in a way that honors its natural flavors. Everyone will enjoy a communal meal of the dishes prepared, paired with discussions on composting, sourcing from CSAs, and reducing kitchen waste. As take-home gifts, each couple/individual leaves with a packet of regenerative seeds, a jar of house-made herb salt, and seasonal meal-planning guides to continue their farm-to-table journey.)
